Wheat flour type “2” obtained by grinding the whole body.

Properties

Excellent results for bakery: focaccia (flat bread), panzerotti (deep fried pizza roll), fluffy loaf and short or medium leavening time.

Ideal for pastry: sponge cake, donuts, puff pastry, plum cake.

Dough appears soft, with regular large bubbles, it can be easily rolled and is able to withstand long operations.
