Genial pizza and focaccia is one of the nuclei for pizza proposed by Molino Pasini. It is added to the flour (7 to 10%) and is particularly suitable for sliced pizza and pan pizza and for pizza makers who prefers classic round, high and soft pizza. Genial may be used with any kind of flour, because it improves its quality; it allows to obtain a soft pizza due to the presence of potato flakes, and with more fragrance and smell thanks to the sourdough mother (dehydrated biga starter enriched with enzymes and malt).
